What is Mandi?
Mandi is a fragrant rice and meat dish from Yemen that’s loved all over the Middle East. It’s smoky, spiced just right, and perfect for sharing with friends and family.
Ingredients
For the Meat
- 1 kg lamb or chicken pieces
- 2 tbsp olive oil
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp black pepper
- Salt to taste
For the Rice
- 3 cups basmati rice
- 5 cups chicken or lamb broth
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 tbsp Mandi spice mix
Cooking Steps
- Marinate the meat with olive oil, turmeric, cumin, coriander, pepper, and salt. Let it rest for 1–2 hours.
- In a large pot, sauté onions and garlic until golden.
- Add the marinated meat and sear on all sides.
- Pour in broth, cover, and cook until tender.
- Remove the meat and add washed rice to the broth. Cook until fluffy.
- Place meat on top of the rice and cover for 10 minutes to infuse flavors.
- Serve hot with salad or yogurt sauce.
